How to make cabbage juice
Can you juice cabbage? Yes, you certainly can! You can make green and red cabbage juice in either your juicer or your blender and this article will outline the steps involved for both of these methods.
Making cabbage juice with a juicer
Cabbage is a highly nutritional vegetable that can be put through your juicer to achieve juice with great healing powers.
Cabbage is available in both green and red varieties and both can be successfully juiced.
When selecting cabbage for juicing make sure that the cabbage head is firm and the leaves are crisp. Avoid limp cabbages that show signs of yellowing as their nutritional content will have begun to decline due to being past their time of optimum ripeness.
To juice cabbage simply cut a segment out of the cabbage head and chop it into blocks small enough to fit down the juicer's feeding chute.
Push the cabbage through the feeding chute with gentle pressure.
What kind of juicer can juice cabbage?
It is possible to juice cabbage with centrifugal juicers and masticating juicers (masticating juicers include the twin gear and single auger models). As a general rule centrifugal juicers tend to juice at a greater speed then masticating juicers but masticating juicers are more efficient in the amount of juice they extract.
Making cabbage juice with a blender
If you don't have a juicer you can still make cabbage juice with your blender.
The following method uses a blender to break down the fibers of the cabbage and the fermentation process produces 'healthy' probiotic bacteria.
- Filter a liter of water using a water filter to remove chemicals such as chlorine that can harm the fermentation process. Boil this water and then let it cool to room temperature.
Cut a cabbage into large chunks and add them into your blender.
- Add the water to the blender and ensure the lid is tightly shut and blend on low power for 1 and a half minutes.
- Now blend on high power for about 20 seconds. Do not worry if there are some small pieces of cabbage left in your 'juice'. You will filter these out later.
- Pour into a clean jar/bowl and seal the lid. Make sure to leave a few centimeters free at the top of the jar as the mixture will expand as it ferments. Place the jar in a cupboard so it remains at room temperature (20 - 25 °C). The cabbage water will start to ferment.
- After 3 days of fermenting strain the cabbage water through a cheesecloth or fine sieve into a sealable flask or bottle.
- You now have a fermented cabbage 'juice' that is rich in probiotics and contains gefarnate and L-glutamine. These play an important role in the health of the digestive tract and the lining of the stomach.
- Put your sealed bottle/flask in the fridge until you ready to drink the juice.
- You can now repeat the process but this time use about 150ml of your fermented juice to the next batch. This is so that the fermentation time is reduced due to the headstart given by the 'seed' juice from your last batch. Doing this means you only have to wait around 1 day instead of 3 days for the fermentation process to occur.
One of the great things about cabbage is that it is relatively cheap compared to many other vegetables and it can be stored for a relatively long time in the fridge. This makes it an excellent standby for your juicing routines and means that you can juice without worrying about overspending / wasting perishable produce.
Cabbage juice benefits
Juicing cabbage has a number of health benefits that have been documented over many years. Green cabbage contains several minerals and vitamins including potassium, sulfur, chlorine, iodine, vitamin C, vitamin B6, and 'vitamin U'.
Cabbage juice has been used to treat a number of health conditions including colitis, constipation, hair loss, skin problems but it is probably most well known for its ability to heal ulcers. It is believed that the glutamine content of cabbage is the main driving force behind the use of cabbage juice to heal ulcers.
How much cabbage juice can you drink a day?
If you consume too much cabbage juice in one go then you may experience a feeling of gas and slight cramps in the intestine due to the sulphur in the cabbage juice reacting with bacteria that exist in the intestines.
Therefore, when you first start drinking cabbage juice you should start with small quantities such as a quarter of a cup and see how your body digests the juice. Build up the amount of juice steadily over a number of days.
People who drink cabbage juice to help heal ulcers often consume around half a cup around 4 times a day.

When juicing cabbage you should not drink more than about 4oz of cabbage juice at a time and it is best mixed with other juices such as carrot/apple juice.
Drinking cabbage juice
If you are not a fan of the taste of cabbage juice you can combine it with other juices such as apple juice to give it a more pleasing taste.

How long can you keep cabbage juice?
Cabbage juice that is made using a juicer should be drunk straight away. If you need to store the juice for drinking later store it in a sealed flask which can be put in the refrigerator.
Cabbage juice that is made using a blender is generally stored for around 3 days to allow the cabbage water to ferment. After this keep the juice refrigerated and sealed, and drink within 2 or 3 days.

This cabbage juice recipe has the advantages of containing the health benefits of cabbage juice as well as the flavor boost that is provided by the carrot juice and celery juice.
The nutritional content of green cabbage is preferred over red cabbage when the cabbage juice is being used to treat stomach ulcers.
With this recipe you can use the other half of the cabbage later in the day if you want to make another fresh juice. Alternatively you can double the quantities and juice the whole cabbage in one go. You can then portion the juice and store the remaining portions in a sealed, chilled vessel for use later in the day.
1/2 medium green cabbage
2 sticks of celery
2 medium carrots
Cut the celery into thumb size lengths so the long stringy fibers do not clog up the juicer.
Cut the cabbage into chunks that will fit down the juicers feeding chute. Peel and if necessary chop the carrots so they will fit down the feed chute.
Using gentle pressure, steadily feed all the ingredients through the juicer.
